Unlocking the Secret to Excellent Sushi: Ask the Chef

Excellent sushi depends on various factors: the rice, the fish, the timing, and the position of Saturn (just kidding!). While many of these factors are out of your control, there is one trick that can help you get excellent sushi every single time:

Ask the Chef.

Why Ask the Chef?

You might think this sounds too simple, but it works. Forget about secret handshakes or specific seating positions—those are myths. Asking the chef ensures you get the best sushi because they are passionate about their craft. They show up early, leave late, and thrive on creating amazing food for their customers. 

When to Ask

Timing is crucial. Restaurants are high-stress environments, especially during rush hours. If you ask during a busy time, you'll likely get a rushed or less thoughtful response. If they’ve got their head down and are muttering swear words under their breath, it’s probably a bad time. An excellent sushi chef will jump on the opportunity to give you recommendations.

What to Ask

It's not just about asking for something good. Be specific and creative. Try this mad lib if you’re looking for inspiration, "If [famous person] were coming for [meal of the day], what would you make to [impressive adjective] them?" This approach engages the chef's ego and creativity, leading to an exceptional sushi experience and a killer conversation starter.

Here are some recommendations from Chef Jeremy to get you started:

Salmon Nigiri with Lemon

This is one of my personal favorites. The Salmon is naturally very delicious and buttery. The thinly sliced lemon adds a beautiful citrus note and really cuts through the fattiness of the fish.

Make sure you eat the lemon with the rind!

Marinated Ahi Gunkan

Talk about a flavor explosion. If you like Ahi, marinating it takes it to a whole new level.

Gunkanmaki (usually shortened to gunkan) is a style of nigiri that works best with ingredients that don’t stay well on top of regular nigiri.

Hamachi Belly with Sensei Sauce and Green Onion

Hamachi Toro is notorious for being extremely fatty and melty in nature. Which is perfectly accented by our citrus style eel sauce, Sensei Sauce, and green onion.
